紫いも is a variety with a purple color.While most sweet potatoes typically have a yellowish interior, 紫いも distinguishes itself with a purple inside, hence its name.
Interestingly, this purple hue persists even after cooking.
I initially believed 紫いも were unique to Okinawa Prefecture, but, in reality, they are also cultivated in Kagoshima, Ibaraki, Chiba, Miyazaki, and other prefectures.
